The Wider Image: Tequila boom rooted in traditional farming techniques
A growing thirst for tequila from New York to Tokyo has made the sale of the drink into a multibillion-dollar industry, but its production remains rooted in centuries-old methods of farming using hand tools and packs of mules. Mexico's western state of Jalisco is the heartland of the tequila industry, where 'jimadores,' the farmers of the agave cactus from which the spirit is distilled, have worked the fields for generations. "I am so proud to be a jimador, we are the first in the chain of the tequila industry, without us there is no tequila," said Mario Perez, a 39-year-old jimador. But the popularity of tequila has driven a worsening shortage of the agave, while some of the younger generation shun what was once a highly respected job. Water reservoirs remained empty for weeks and nearly 300 towns declared a state of emergency in the state of Bahia alone during the month of May. Although there has been some rainfall over the past days, the small farmers in the region are still struggling to recover what they lost during the dry period. The situation in the northeast is one of the many climate issues on the agenda of this month's UN Rio+20 sustainable development summit in Rio de Janeiro. Tequila, once known as the mostly-to-be-avoided drink of party animal and macho revolutionaries, is brushing up its image. The Mexican government recently won the right in the European Community to ensure that only agave-based liquor produced in the states around the dusty central Mexican town of Tequila had the right to be named tequila. A distillery worker (L) ceives a bucket-load of cooked and ground agave as he mixes the cactus fruit in warm water to release its sugars at Don Felipe Camarena's tequila distillery, November 23 during traditional production of Mexico's famous liquor. Tequila gained the European Union's rules of origin status this weekend, which, along with such institutions as -champagne and -cognac, means its providence is guaranteed and the drink bearing this name may only be produced in this part of Mexico. Tequila exports, particularly the high quality variety, have boomed over recent years as the rest of the world has acquired a taste for the cactus liquor.
