North Korean defector Kim Young holds a dish of traditional North
Korean cold noodles called 'Pyongyang Rangmyun' at his restaurant in
Ilsan, about 45 km (27 miles) north of Seoul June 17, 2003. Kim, 44, a
former North Korean speed skater and state trade official, fled his
country after witnessing the relative wealth and comfort of
communist-era Poland and Czechoslovakia. Kim turned the praise of
friends for his North Korean cold noodle recipe into a chain of some 40
