Can & Can restaurant chef prepares canned sardines with eggplant and cherry tomato serve in downtown Lisbon, April 15, 2013. On the Comercio square a new restaurant and bar, Can & Can, opened recently serving fish cans as "gourmet" in a modern design atmosphere. Portugal, canned fish is as popular as burgers in the U.S. or bratwursts in Germany. Only about half of the once prosperous industry has survived over the years, but the remaining industry employs around 3,500 workers and produces more than 250 million fish cans a year, exporting around 70% of their production to some 70 countries worldwide.
