A kitchen staff prepares "yu sheng", a raw fish salad, before a mass "lo hei" dinner on Renri, the seventh day of the Chinese New Year, in Singapore February 1, 2009. Yu sheng is served to raise "good luck" for the new year and is usually eaten on Renri. In a celebration known as "lo hei", which is Cantonese for "to toss luck", families will toss the shredded ingredients into the air with chopsticks while saying auspicious wishes out loud to mark the start of a prosperous new year.
